This sheet pan fajita recipe is a favorite in our house, we like to serve it with a side of Mexican street corn salad and homemade pico de gallo. For dessert, keep it tropical with some pineapple fluff!

Ingredients
- Chicken – Tenderloin (pictured), breast, or thighs; boneless/skinless. Cut into thin strips.
- Peppers – Bell peppers, sliced thin. We like to use a variety of colors.
- Onion – My preference is red onion. Sweet yellow onion can also be used.
- Oil – Vegetable oil, we like to use olive oil.
- Seasoning – Fajita seasoning. You can use a pre-made package or make your own fajita seasoning.
- Lime – Fresh squeezed juice.
- Tortillas – Flour or corn tortillas for serving. Alternatively you can serve over rice or cauliflower rice.
Step-by-step directions
⭐ First, mix together the chicken, bell peppers, onions, olive oil and fajita seasoning. Spread the mixture out on a baking sheet.
⭐ Then, cook until chicken reaches a safe internal temperature and the peppers and onions are softened and starting to caramelize.
⭐ Next, squeeze lime juice over pan, as desired.
⭐ Finally, serve with desired garnishes and tortillas or over rice.

Pictured is chicken tenderloins cut into thin strips, but you can use breast or thigh meat as well.
I tend to purchase whatever is on sale.
What kind of seasonings?
Fajita seasoning is made with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. It’s easy to make your own, but there’s no shame in grabbing a packet from the market either!
What vegetables should I use?
We always include bell peppers and onion, but you can also add other veggie favorites like mushrooms, zucchini, or tomatoes. Go ahead and raid the refrigerator to use up whatever’s lurking about.

How long will the leftovers keep?
Keep leftovers in a sealed container in the refrigerator for up to 4 days. They make a delicious salad over lettuce with this citrus vinaigrette dressing.
Can you freeze sheet pan fajitas?
Yes! Roast two trays to make a super easy dinner or lunch in the future. Allow the pan to cool, then store contents in an air tight freezer safe container for up to 3 months.
It is noteworthy that the peppers will lose their crispness when frozen and thawed.

Ingredients
- 1½ pounds chicken sliced thin
- 3 bell peppers any color, sliced thin
- 1 small red onion thinly sliced
- 1 tablespoon olive oil
- 2 tablespoons fajita seasoning or one prepared packet
- fresh lime juice to personal taste
- flour tortillas fajita size, for serving
Instructions
- Mix together the chicken, bell peppers, onions, olive oil and fajita seasoning. Spread the mixture out on a lined or oiled baking sheet.
- Cook in a 425°F oven for 20 minutes, until chicken is cooked through and vegetables are tender.
- Squeeze the lime juice all over the cooked fajita mixture, to taste.
