Bacon wrapped chicken bites is a delicious sweet and savory dish that is perfect for a party appetizer or your main dinner course!

This recipe for chicken cooked in bacon and seasoned with brown sugar and mustard is one of my family’s favorites! Try it for dinner this week with creamy mashed potatoes and roasted broccoli!

Ingredients

  • Chicken – Boneless/skinless, cut into bite sized pieces. Pictured is chicken tenderloins, but you can use breast or thigh meat too. 
  • Bacon – Thick cut bacon, strips cut into thirds. 
  • Sugar – Light brown sugar. 
  • Paprika – Paprika. We used regular paprika, but smoked paprika would also be delicious. 
  • Mustard – Dijon mustard.

Step-by-step directions

First, mix the brown sugar and paprika. Sprinkle some over the bottom of your baking dish. 

Next, wrap each chicken bite with a piece of bacon and secure with a toothpick. Place in baking dish. 

Then, mix remaining brown sugar and paprika with the dijon mustard.  Spread on top of the chicken bites. 

Finally, bake until chicken is cooked through and bacon is browned.

Place some of the brown sugar mixture below the chicken, and some (mixed with mustard) on top!

Preparation

Can you make them ahead of time?

Yes, these can be prepped a day ahead and then baked when you’re ready to enjoy. 

Alternatively, you can bake them the day before, then warm in the oven or air fryer before serving. 

What cut of chicken works best?

This is purely a matter of preference. Chicken breast, tenderloin, and thigh meat all work well. I typically choose whatever I can find on sale. 

Is this a main dish or appetizer?

Either! Feel free to serve this as a delicious appetizer recipe at your next party, or use it as the main course for dinner served with a vegetable and a starch.

Storage and leftovers

How long will it keep?

Store leftovers in an air tight container in the refrigerator for 3 – 4 days. Reheat in the microwave, oven or air fryer. 

Can leftovers be frozen?

Yes, allow them to cool after baking, then store in a freezer safe, air tight container for up to 3 months. Defrost in the refrigerator. 

KEN BITES WITH BROWN SUGAR
If using a broiler safe dish, you can get them extra toasty by broiling for a few minutes at the end.

✅ Try making it pork instead of chicken. 

✅ Make an extra tray and stash it in the freezer for unexpected guests.

Ingredients
 

  • pounds boneless skinless chicken cut into bite sized pieces
  • 1 pound thick cut sliced bacon cut into thirds
  • cups light brown sugar
  • 1 teaspoon ground paprika
  • 1 tablespoon dijon mustard

Instructions

  • In a small bowl mix the brown sugar and paprika. Evenly spread about 1 cup of the mixture over the bottom of your casserole dish.
  • Wrap a slice of cut bacon around each piece of chicken piece and secure with a toothpick. Place the bacon wrapped pieces into the baking dish.
  • Whisk together the remaining brown sugar mix with the mustard. Top the wrapped chicken with the mustard mixture.
  • Bake uncovered at 350°F for 15 minutes, then baste with the liquid that has formed at the bottom of the dish.
  • Continue baking uncovered for an additional 15 minutes, until the chicken is cooked through and the bacon is browned. If desired, turn on the broiler for 2-3 minutes at the end. (Watch closely if using the broiler and only do this if using a broiler-safe dish).
