- Potatoes – Baby red potatoes.
- Butter – Unsalted.
- Seasonings – Paprika, Italian seasoning, salt, and pepper.
- Parmesan – Grated parmesan cheese. Freshly grated will always give the best flavor, but you can use canned pre-grated if that’s what you have available!
How do you make parmesan roasted potatoes? (step-by-step directions)
⭐ First, preheat the oven and cut the potatoes in half.
⭐ Next, melt the butter in the microwave or on the stove top. Add in the seasonings and the parmesan cheese and mix well. Pour into the bottom of a baking dish and spread evenly.
⭐ Then, place the cut potatoes face down into the baking dish. Bake until potatoes are fork tender.
⭐ Finally, remove potatoes from the oven and allow to rest. Garnish with fresh parsley and more grated parmesan.

How to Make Parmesan Roasted Potatoes
Parmesan Roasted Potatoes
Ingredients
- 1 package baby red potatoes (24 ounces)
- ½ stick unsalted butter (¼ cup)
- 1 tablespoon paprika
- 1 tablespoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon fresh ground pepper
- ½ cup grated parmesan cheese
- optional garnishes: grated parmesan cheese, fresh parsley
Instructions
- Rinse and dry potatoes. Cut in half lengthwise, then set aside.
- In a medium sized microwave safe bowl, heat butter in the microwave on high power in 30 second increments, until fully melted. Add paprika, Italian seasoning, salt, and pepper. Whisk to combine.
- Spread seasoned butter evenly into a 9x13" baking dish. Top with parmesan cheese, then place potatoes into dish in a single layer, cut side down. Use a basting brush to brush a little bit of the seasoned butter from the dish over the top of the potatoes.
- Bake uncovered in a 425℉ preheated oven for 35 minutes. Remove from oven and allow potatoes to rest 5 - 10 minutes.
- Garnish with additional grated parmesan and fresh parsley.
