When I made this soup, my ten year old son, Casey, told me he didn't like black beans and 'no thank you.'  Then he tried it, and I almost didn't have enough left to take pictures.  This Easy Black Bean Soup is so ridiculously simple to make that you won't believe how delicious it is until you make it yourself.  And then you'll be asking yourself why you didn't make a double batch.  But that's okay!  Because it's so easy to make, you can just whip up more!  And I bet you will, too.

I like my black bean soup a little bit chunky, so we chose to puree only about half the soup.  If you like it super chunky and beanie, you can skip blending it altogether - or if you like a smooth black bean soup, go ahead and blend the whole thing.

We're supposed to get a cold front this weekend (yay, Florida!), so I'm totally whipping this up on Saturday when our friends come over to watch football and usher in the new year.  I've heard that beans are good luck.  Or good for your heart.  Or just taste fantastic.  Any of those options work for me.

It's important to use stock (chicken, turkey, or vegetable) rather than water in this recipe, because the stock adds an extra level of flavor.  If you're out of chicken stock, a bullion cube will work - or even the flavor packed from a package of ramen. Hah!  I used turkey stock left-over from Thanksgiving. Mmmmmm.  Obviously homemade stock is wonderful, but don't stress if that's not your thing!

A well plated soup is artwork.  Almost too pretty to eat. Not quite, but almost.  I love garnishing soup with colorful bits.  Here we used shredded cheese, green onion, and extra Ro*Tel!  Sour cream would be delicious too.  Ah!  Now I'm craving soup again!

If you prefer some kick to your black bean soup, feel free to add fresh or pickled jalapenos.  Jalapenos could be incorporated into the body of the soup if everyone likes it spicy, or just as a garnish for families with pickier eaters.

Easy Black Bean Soup Recipe, Ingredients:


  • 1 can Ro*Tel Original Diced Tomatoes & Green Chilies (10 ounces)
  • 1 can black beans, not drained (15 ounces)
  • 2 cups (or about one can's worth) chicken or vegetable stock
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon cumin
  • salt & pepper, to taste
  • optional garnish: sliced/chopped onion, shredded cheese, sour cream, extra Ro*Tel



Easy Black Bean Soup Recipe, Directions:


  1. Combine all ingredient in a pot and bring to a boil.  Cover and simmer on low 5 - 10 minutes, allowing flavors to marry.
  2. Blend about half the soup with an immersion blender, or by carefully transferring half the soup into an upright blender.
  3. Garnish and enjoy!

Serves: 2 large bowls or 4 small, Time to prepare: 15 min
