  • Peas – Frozen green sweet peas. It is not necessary to thaw them before beginning. 
  • Butter – I’m partial to salted butter, but unsalted is also fine. 
  • Flour – All purpose flour. 
  • Milk – Whole milk. 
  • Cream – Heavy cream (also sometimes called whipping cream). 
  • Sugar – Granulated white sugar. 
  • Seasonings – Salt and pepper. 
CREAMED PEAS INGREDIENTS
Peas, milk, cream, flour, butter, salt, pepper, sugar.

Step-by-step directions

First, melt butter on the stove top, then add the peas and cook until they have heated through. Stir gently so as not to mash the peas.

Next, sprinkle in the flour, mix well and continue to cook.

Then, stir in the milk and cream. Bring to a gentle simmer and stir until thickened.

Finally, add the sugar and season with salt and pepper to taste.

HOW TO MAKE CREAMED PEAS
Cook the peas in butter, then add flour. Pour in milk and cream, then simmer to thicken. Add sugar, salt, and pepper.

Can you make homemade creamed peas ahead of time?

This can be made a few days in advance and stored in the refrigerator. Reheat on the stove-top on low heat, or in the microwave on high heat in 30 second increments. 

Stir in additional milk as needed while reheating. 

Can I use frozen peas?

Yes, this recipe is best when made with frozen peas. Canned peas tend to be too mushy.  Fresh peas will work but you’ll want to boil to soften them before adding to this recipe. 

How do you make it gluten free?

Swap the flour for corn starch to make this recipe gluten free.  You’ll want to mix the corn starch with equal parts starch and cool water to create a slurry before adding it to the hot pot.

Storage and leftovers

How long do creamed peas last?

Leftovers will keep for 3 – 4 days in a sealed container in the refrigerator. If the dish was kept out at room temperature longer than two hours, leftovers should be disposed of as they can harbor harmful bacteria. 

Can you freeze it?

Yes, allow the peas to cool, then put in a freezer safe sealed container. Make sure to leave headspace for expansion. 

Defrost in the refrigerator and reheat on the stove-top on low heat, or in the microwave on high heat in 30 second increments.  Stir in additional milk as needed while reheating.

  • 4 cups frozen peas
  • 2 tablespoons butter
  • 2 tablespoons all purpose flour
  • ½ cup whole milk
  • ½ cup heavy cream
