Cabbage Steaks Ingredients

  • Olive Oil – Don’t be stingy with the oil, as it allows for overall caramelization and ups the flavor.
  • Green Cabbage – Or red cabbage, either is fine! We just love cabbage!
  • Kosher Salt – The larger crystals of kosher salt add a nice punch of salt as you bite in.  Go ahead and use sea salt or even regular table salt if you don’t keep kosher on hand.
  • Garlic Powder – Garlic adds a nice “steakiness” to the dish. Yes, that is now a word. You could also try rubbing fresh garlic onto the steaks before roasting them. Mmm mmm mmm. (I don’t suggest using minced garlic as it may burn).
  • Paprika – Paprika adds flavor and color. Try smoked paprika or spicy paprika for an even bigger punch.
  • Onion Powder – The powder makes it nice and easy, I love how it get into all the nooks and crannies.
  • Ground Pepper – Fresh ground pepper is preferred, but if you don’t have any, regular pre-ground pepper will work too.
  • Optional – Lemon juice squeezed over the cabbage steaks right before serving can add a nice bright acidic touch.

How Do You Make Cabbage Steaks (Step-by-Step)

First, grease a large baking sheet with oil while you preheat the oven.

Next, slice cabbage and place on baking sheet.

Then, brush each cabbage slice with oil and sprinkle with spices.

Finally, roast for until edges are caramelized and becoming crispy.  Cooking time will depend on thickness of your cabbage steaks, and how caramelized you like them.

Cabbage steak is a thick slice of cabbage cooked to enhance caramelization for flavor. Although the word “steak” is usually applied to meats, here it is defining more the shape and heartiness of the dish.

What kind of cabbage is best for cabbage steak?

Any kind of cabbage works! Green is the go-to, but how pretty would a slice of red cabbage be?

What can you top cabbage steaks with?

Try them with crumbled bacon, cheese (I like blue cheese), almond or other nut butters, roasted seeds, proteins like roasted chicken or pulled pork, even a drizzle of honey. Think of your steak as not just a side dish on its’ own, but as a type of grilled salad.

Sticking to low carb? Use a slab of roasted cabbage steak as a “bun” for your open faced hamburger. Probably won’t work if you try to pick it up, but will be a nice nutritional bottom bun for a juicy burger and toppings.

There are approximately 6 calories in a cabbage steak, depending on the size and thickness. Any way you slice it, cabbage is a low calorie food.

Carbs in a cabbage steak start at about 1-2 grams for the cabbage itself, depending on the size and thickness of the slice, plus any additions added to it. As my recipe is adding only fat (olive oil) and spices, it remains a low carbohydrate dish.

Ingredients
 

  • cup olive oil
  • 1 head of green cabbage
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ¼ teaspoon ground pepper

Instructions

  • Grease a large baking sheet with olive oil.
  • Slice cabbage, in a top to stem motion, in ½ - ¼” slices (the thinner your slices, the more caramelization you will get).
  • Place cabbage steaks onto baking sheet in a single layer.
  • Brush each cabbage steak with olive oil, then sprinkle evenly with each spice.
  • Roast on center rack of oven at 400 degrees for 45 - 60 minutes (the thicker your cabbage steak, the longer it will take).
  • Serve immediately.

  5. I just popped my seasoned cabbage steaks into the oven. I’ll be back to say how they turned out.
    The recipe is very easy. I couldn’t find my fresh garlic cloves, so I used a spice blend with garlic & onion crystals, salt, and pepper, oregano, basil and parsley.

    For the cabbage steaks, if you chop garlic very fine, add to oil, warm, let sit–you should be able to get it into the folds. Untried, but will be tomorrow. Should be little burnt garlic. A bit more prep…BR….
