This Strawberry Lime Popsicle Spritzer recipe is the perfect strawberry lime mocktail or strawberry lime vodka cocktail for your afternoon refreshment!
Okay, so I’ve officially found my new favorite mocktail. I mean, you could totally jazz it up if you want, but hello, I’m thoroughly in love with this Strawberry Lime Popsicle Cocktail Spritzer just as it is.
Super cold, lightly sweet, and incredibly refreshing. Also, it’s kind of beautiful. There’s only three ingredients and I feel confident that anyone who likes the combo of strawberry and lime will appreciate this one.
Pretty sure (totally sure) this will be the signature drink at my birthday summer barbecue next weekend. Mmmmmmm
I’m such a huge fan of recipes that look good enough to serve in a five star restaurant, but are simple to prepare at home. This Strawberry Lime Popsicle Cocktail is definitely one of those. You could even put your kids to work for you filling up the glasses while you chop fruit. Free labor, yay!
You could use larger strawberry pieces, or even whole strawberries if you wanted, but I thought it would be nice if it were easy to get bits of strawberry as you drank. And I love the way they look floating on top.
We chose a lime flavored seltzer, but I bet berry on berry would be a delicious combination too! Or if you want a kick and aren’t a fan of vodka, try using a spiked seltzer or cider.
The addition of a popsicle in your cocktail rather than ice is great because it just continues to contribute flavor as it melts and keeps you (and the drink!) cool while you’re enjoying time outdoors with family and friends. Also (I know, I know, I keep saying this), it looks really nice.
The drink is perfect for those who are limiting sugar intake too as seltzer is unsweetened and you can choose (or make!) the popsicle that fits best with your diet. I’m a big fan of the all fruit type with very little sugar.
My kids on the other hand… well, they’re not the ones grocery shopping. Hah!

Strawberry Lime Popsicle Spritzer
Ingredients
- 1 can lime sparkling water 12 ounces (can use spiked seltzer or cider for a kick)
- 3 - 4 ripe strawberries diced
- 1 strawberry fruit popsicle
- optional: colored sugar for rim lime for garnish, vodka for fun
Instructions
- Rim glass with colored sugar, if desired. Add strawberries to bottom of glass.
- Place popsicle stick side up into glass.
- Pour seltzer into glass, then garnish with a lime slice.
- ENJOY!

I happened to have everything for this and made them impromptu for a couple of the neighborhood moms as we got together for the last time of this school year! There was not a drop left, we really LOVED them! The lime was so nice along with the strawberries! Im going to be making these often this summer! THANKS!
