I homeschool the kids during normal waking hours, so my work "day" often begins late in the evening after they're all tucked into bed. Staying up until 2 or 3 in the morning means I'm rarely rolling out of bed before 8:30 (despite my phone and FitBit's incessant attempts to the contrary). And on weekends if there aren't any kids' sports to attend, sometimes he'll let me snooze until as late as 10:00! He's a good guy.
On days like that, I'm barely ready for breakfast at lunch time (I can't eat when I first get up - it's a thing). So this Breakfast Chili is my way of joining the menfolk (and Josie!) in their game day eating, with a bit of a "morning" twist. It would also be excellent as a breakfast for dinner dish, or a game day breakfast for those on the west coast who have to watch the games at weirdly early hours!
Breakfast Chili, Ingredients:
- Your favorite chili
- optional: cheese, sour cream, scallions, hot sauce
Breakfast Chili, Directions:
- Bring chili to a simmer on the stove top.
- Crack eggs into chili and cover until eggs are cooked to your liking.
To make the recipe quick and easy, I used Hormel® Chili! My preference is bean-free chili and this one didn't disappoint. Did you know, in 1935, the Geo. A.
